Brighton Gin

Brighton is the Pavilion, the Pier and the Duke of York's. It's the Prince Regent, Laurence Olivier and Max Miller. It's Phoebe Hessel, Mrs Fitzherbert and Martha Gunn. It's Brighton & Hove (actually), Mods & Rockers and the Seagulls. It's the Veteran Car Run, the London to Brighton and Brighton Races. It's the Downs, the sea and Brighton Rock. It's Pride, naughty weekends, illicit pleasures and now....
...it's Brighton Gin

Brighton Gin, whose other botanicals include angelica, lime and milk thistle, (well-known for cleansing the liver - helping you to detox as you tox so to speak) makes a deeply refreshing G&T in which instance, we recommend serving it with a slice of orange to bring the fresh orange peel botanical to the fore.

Versatile and adaptable, Brighton Gin also works brilliantly as a martini and is exceptional as part of a negroni. This is a subtle, ruminative gin and thanks to its softness, Brighton Gin is also delicious sipped neat, over ice with a slice of orange.

FEW Spirits hails from Evanston in the United States of America, a city that suffered Prohibition for over one hundred years thanks to many of its advocates hailing from its dry streets. Thankfully Evanston is now home to this excellent craft distillery which takes its name ironically from the initials of Frances Elizabeth Willard, a key figure in the Temperance Movement.

In late 2009, Ilegal Mezcal became legal and started appearing at select restaurants and bars in New York, Texas and California. Bartenders and mixologists were all over it. Many of them flying back with John to Oaxaca and Antigua to better understand this ancient elixir, and have a little adventure of their own.

Broker's Gin 40% & 47% - Winner - Ultimate Cocktail Challenge - New York 2012

The distillery where Broker’s Gin is made is located near Birmingham, England and is over 200 years old. There had previously been a brewery on the site, but this was converted to a distillery at a time when gin-making became more profitable than beer-making. The recipe for Broker’s Gin is 200 years old and was chosen after taste-testing against several newer recipes. Often the old ones are the best ones.

The distillery uses only traditional pot stills. Continuous distillation using column stills is more efficient and is used by the major brands, but pot stills are better for extracting maximum flavour from the botanicals in a traditional hand-crafted fashion.

The copper pot still used for producing Broker’s Gin is named “Constance” and was manufactured by John Dore & Co, long recognised as the finest still-maker in the world.

The base spirit for Broker’s Gin is quadruple-distilled pure grain spirit made from English wheat. The flavour is provided by ten natural botanicals, the primary one of which is juniper berries – as in all gins. The botanicals are steeped – soaked – in the base spirit in the still for 24 hours. This is the first part of the flavour-infusion process. The still is then fired up for the final, fifth distillation, which completes the process.

Professor Cornelius Ampleforth's Bathtub Gin.

Even before he earned his degree and title of “Professor”, Cornelius Ampleforth was a slightly-mad, wide-eyed inventor. He had big dreams of a running a big laboratory with miles and miles of botanicals, spirits, bubbling beakers, glass vials, and bottles, and in the Autumn of 2011, his dreams were realised with the release of his now infamous Bathtub Gin. The tireless Professor continues to create anything he can imagine, from a 91.2% Cold-Distilled Absinthe to a Cask-Aged Gin—there is literally nothing that can deter this gentleman from his experiments!

Each small-batch bottling represents the Professor's perfection of an idea that began merely as a twinkle in his eye. With his trusty kit of carboys, jerry cans, beakers, pipettes, and (occasional) rotary evaporation still, he has resurrected the spirits of the past for the delight and delectation of the discerning palate. Infusion, cold-distillation, and the Professor's own genius ensure that each bottle contains rich and complex flavours, and delicate botanicals remain intact.

We've yet to witness any explosions flash from the windows of the Ampleforth Lab, and the Professor still maintains his lion-esque eyebrows, saints be praised. We await his next concoction with trepidation and wonder!

Black Cow - Pure Milk Vodka 40%

Black Cow is the world’s first pure milk vodka, made entirely from the milk of grass grazed cows and nothing else. Fresh whole milk makes an exceptionally smooth vodka with a unique creamy character.

The milk is separated into curds and whey. The curds are used to make cheese, the whey is fermented into a beer using a special yeast that converts the milk sugar into alcohol. This milk beer is then distilled and treated to our secret blending process. The vodka is then triple filtered and finished, before being hand bottled.

Incidentally Black Cow is made from the same milk that is used to make Barber’s 1833 cheddar, winner of the World Cheese Awards Cheddar Trophy 2012.

Monkey 47 - Schwarzwald Dry Gin

Certainly Not! Admittedly, it appears somewhat eccentric to claim that a recipe for gin has the power to unite great British traditions, the exoticness of India, and the purity and nativeness of the Black Forest. And yet it is precisely this eccentricity that defines the enigmatic character of Montgomery Collins, from whom our Schwarzwald Dry Gin originates.

Wing Commander Montgomery Collins, a man with a name so perfect for a gin story, you could name a drink after him (and we have). Monty, as he was known, was stationed in the British sector of Berlin at the end of the Second World War, and was involved in the rebuilding efforts there. One of the projects he became particularly associated with was the rebuilding of Berlin zoo, through which he became the sponsor of an Egret Monkey, known as Max.

When Collins retired from the Royal Air Force in 1951, he decided to move to the Black Forest to pursue an interest in watch making, however it turned out that he had little aptitude for this pastime. Upon realizing that his skills as a watchmaker were somewhat wanting, he decided to open a guesthouse, which he named 'the wild monkey' in honor of the monkey he had once sponsored in Berlin.

Being a true Brit, he wasn't willing to forgo the pleasure of a gin and tonic or two of an afternoon, and it wasn't long before he took an interest in producing his very own gin using botanicals from the Black Forest, and the pure water that flows in that region. Pretty soon Monty had developed a unique style of gin based on the regional ingredients of the Black Forest, and was able to enjoy his very own G&T while gazing at the stunning countryside with views all the way to the Alps.

The story of Monty Collins trails off in the early 1960s, and it wasn't until work at the old guesthouse was started at the turn of the century that his gin was rediscovered. A box, containing a bottle featuring a hand written label with a picture of a monkey on it was found. The bottle was labeled 'Max the monkey – Schwartzwald Dry Gin' and was accompanied by a letter detailing the plant ingredients used to make this long lost gin.

MONKEY 47 - Distilled from 47 predominantly unusual but regional botanicals such as lingonberries and blended with natural spring water. Cheers!

McAfee's Benchmark No. 8 Straight Bourbon 70cl / 40%

McAfee's Benchmark is named in honour of the intrepid McAfee brothers, who carried out the original 1773 survey of what became Leestown, Kentucky and the site of the Buffalo Trace distillery.

This rye recipe Kentucky straight bourbon is distilled to 40% by the whiskey experts at the Buffalo Trace Distillery, and gently aged in oak barrels to create an easy-drinking bourbon that also makes a fine cocktail. Medium amber in colour, Benchmark balances fruit and caramel flavours with just a touch of tobacco and leather for a smooth, accessible experience.

McAfee's Benchmark was awarded 90 points by Wine Enthusiast and is a former Gold Medal and Trophy winner at the International Spirits Challenge.

This really is one for the more well known Bourbon producers to beat, and despite its status as an outsider, really warrants some attention, especially if cocktails are on the menu.
